Human rights activists – they’re just lovely folks, huh? They want the Guantanamo Bay detention facility closed, yet this past Sunday, Obama’s new BFF, Raul Castro, had 200 Cuban dissidents arrested. Where’s the outrage from the human rights activists? Five Americans are now being held by Iran, but Obama wanted his Joint Comprehensive Plan of Action (JCPOA), the Iranian nuclear agreement, signed and where are the human rights activists? American hostages don’t matter because they don’t fit into the political narrative of the liberal progressive left — and President Obama, because, Obama MUST shut down Gitmo before he departs by hook, crook, or unconstitutional executive order since it meets his campaign promise. (Ours was sugar cured not salt cured)
In the late fall of the year was hog killing time. My grandfather raised hogs for himself, his 3 sons and their family, and others in the neighborhood. It usually took at least 2 to 3 days for it all to get done. We'd have 20 or more working on it all.
Shoot, scald, scrape, gut, and cut - left 6 large pieces to be trimed into all the different things a hog
turns out to be. Shoulder, shanks, hams, sausage, bacon, sides, ribs, pigs feet, etc.
My job was to render the fat for lard.
Build a large fire with a 20 gallon iron pot in the center held by the tripod. When the cubes of fat had the fat cooked in them I would scoop it out and put it in the lard press, put the lid on and run the screw handle down to squeese the lard out of the pieces of fat, The press had a spout that drained into a stainless steel 5 gallon can (called a lard can) Tee Hee.
I'd start eating the 'cracklins' as soon as the 1st bunch was cool enough ( looked like a cake with a whole in the center about 4" thick) until they made me sick but I had to keep working. ((just remembered this and come back to ad it in -Mom Ma would bring me a Pepsi at lunch time which she knew would wash the cracklings down and cause me to belch)) I'd spent most of the day doing that but in between times I'd check out the killing and the smokehouse crew where they were grinding the meat for sausage and rubbing down the shoulders, hams, and sides. We used a mixture of salt, brown sugar, Saltpeter (used as preservative also), and pepper. Some pieces were placed in feed bags others hung up as is [ I never did know why? ]They cure there during the winter ( no we didn't smoke anything ).
It was always interesting to me how the blacks in the neighborhood knew what day we'd be doing that so they came and got what we didn't want and Pop would usually throw in a few extras.
They took the meat scrapes, ground them up, added all their special flavorings and used the hog guts to stuff it in. Turned out looking like a big long fat snake. I've eaten them a few times on a wiener bun and it was delicious.
PS: I grew up in a time and place where there was always work to be done but to change the tempo
I'll tell ya next about our seining trip down Fork Lick Creek, an all day affair.

Haven't you learned anything in the last 7 1/2 years Denny, the man(  ) is an habitual liar and you can take anything he says and the opposite will be what he's really thinking and going to do. Good point about the Boston Bombers Seems the terrorists and the illegal immigrants have something in common here in the states they can continue to show up on the radar but they're ignored by our government, or even given safe haven??? You are "EXACTLY CORRECT" Jimbo but 1st he must create enough chaos (confusion and disorder )[I'd say he's got US about there] in the US to declare Marshal Law. Curtis & Leroy saw an
ad in the Starkville, MS Daily and bought a mule for $100.
The farmer agreed to
deliver the mule the next day.
The next morning the
farmer drove up and said, "Sorry, fellows, I have some bad news,
the mule died last night."
Curtis & Leroy replied, Well, then just give us our money back."
The farmer said, "Can't do
that. I went and spent it already."
They said, "OK then, just
bring us the dead mule."
The farmer asked, "What in
the world ya'll gonna do with a dead mule?"
Curtis said, "We gonna
raffle him off."
The farmer said, "You
can't raffle off a dead mule!"
Leroy said, "We
sure can! Heck, we don't hafta
tell nobody he's dead!"
A couple of weeks later,
the farmer ran into Curtis & Leroy at the Piggly Wiggly grocery store and asked.
"What'd you fellers ever do with that dead mule?" They said, "We raffled him
off like we said we wuz gonna do."
Leroy said, "Shucks, we sold 500 tickets fer two dollars apiece and made a profit of
$998."
The farmer said, "My Lord,
didn't anyone complain?"
Curtis said, "Well, the
feller who won got upset. So we gave him his two dollars back."
Curtis and Leroy now work
for the government.
They're overseeing the
Obamacare and Defence Spending!
Obama Is Also Thinking of Putting Them in Charge of Social Security & The Veterans Affairs Departments.
Limit all politicians
to two Terms.
One in office
and one
in prison
prison for sure.
